Chicken and turkey marinade Malcolm’s Bird Brine
Never serve dry and tasteless poultry again. Birds weighing more than 5.5 kg need a 24-hour marinade. Birds weighing less than 5.5 kg should be marinated for 6-12 hours for maximum flavour. For smaller pieces, a couple of hours is sufficient.

Directions: Mix 1 cup (about 230 grams) of the solution with 1 gallon (about 4.5 liters) of water. (For larger birds, double the recipe.) Place the bird (turkey, chicken, goose, duck, etc.) in the container of your choice and pour on the liquid made with Malcolm’s Bird Brine. Make sure the meat is completely submerged in the liquid. Keep the meat in the fridge or in a cool place throughout the marinating period, ice can be added to the liquid if required.
