Barbecoa Korean Chicken Sauce

Barbecoa is a very well known BBQ team from Belgium and a multiple champion in their country. The team is always in contention for the title of best European BBQ team. The leader Tom Bertels also makes sauces and seasonings. Korean Chicken Sauce, created by Tom, is a sour, slightly sweet chicken sauce with a nice kick. This sauce is inspired by buffalo sauce, but that’s not it. A balance was found to not be some kind of crazy spicy but still balanced. To achieve this, Tom has used authentic Korean Gochujang chilli paste, the whole sauce has a nice creamy texture and sticks to the food beautifully. A very good sauce for chicken, wings or scampi bowls.

Well, there’s a kick, but not so much that Ardo :))) (who is not a big fan of spices) can’t eat it. A good example was that a piece of chicken that had been rolled in lard and dried out was made perfectly edible by the sauce.

Pro-tip:

Don’t limit yourself to chicken, but also think about salads, for example, as the creamy texture of this sauce is perfect for them.
