Thanks to its natural properties and special origin, this unique material has the physical characteristics ideal for fat-free grilling in any form. As the stone has withstood very high temperatures over time, both from volcanic activity and from the abrasion of continental shelves, it is also quite resistant to high temperatures. You can simply light a fire under the slab and it will work! Typically used as an add-on to stone barbecues for cooking meat, fish as well as vegetables. There is no need to add fat, the flames or the overly intense heat of the glowing coals will not damage the food. As no fat drips into the grill, there is no bad smell or smoke which can be harmful to our health. Ideal heat distribution across the entire stone plate makes slow cooking as well as keeping food warm afterwards convenient.
However, as with all things of value, some rules of use and care must be followed.
USE
You must be careful when using a new lava stone for the first time, and the stone must be treated:
– wash with salt water and dry thoroughly;
– lubricate it on both sides with olive oil or lard and leave it to rest for at least 24 hours; then remove excess fat with absorbent paper.
– when first heated, heat gradually, adding heat slowly. This will help prevent microfractures.
– slow increase in heat is also good for later use. Cracks will develop over time anyway, but proper use will keep the stone in good working order for longer.
– You can check that the stone has reached maximum heat by dripping vinegar on it, for example. If it evaporates immediately, the stone is ready for use.
– The stone can withstand temperatures of up to 700C, but in normal use no more than 400C is ever needed. Do not overheat!
– You can heat the stone in different ways: gas barbecue, pellet barbecue, wood oven, outdoor barbecue, etc.
– may not add any fat to products at all in the name of a healthier diet. The surface of the stone will not crack.
– you can add olive oil, butter, or a splash of wine to your food.
– a groove milled into the stone for fat collection
– under no circumstances should you use a dishwashing detergent for cleaning, it will soak into the stone and spoil your next meal. Just scrape the stone clean with a spatula.
