This 3-piece unit combines a charcoal grill with lid, a hot smoker and a cold smoker, offering even temperatures, good smoke circulation and a flexible design for everyday grilling as well as extended “low & slow” cooking. The modular design (separate grill/smoke chambers) makes the Apollo 18 particularly versatile, and precise airflow is key to achieving clean smoke flavours and juicy results.

Set and construction
Apollo 18 is built so you can choose the setting to suit your needs. The kit includes:

a base with charcoal basket

How to use
1) Barbecue (portable barbecue)
Place the lit coals in the charcoal basket.
-
For indirect grilling, stack the coals to one side.
-
For direct hot browning, spread the coals in an even layer.
The arrangement of the grate allows you to choose: -
top position (better for indirect grilling)
-
lower position (high heat, fast browning)
2) Hot smoking (low & slow)
Apollo® is designed for prolonged cooking at low and stable temperatures. The recommended smoking range is 225-250°F (approx. 107-121°C).
Recommended approach: the Minion method

Fill the basket with unlit charcoal and leave a hole in the middle.
-
Pour the pre-cut coals into the block.
-
Keep the air holes open at the beginning until you reach the target temperature.
-
Add up to 3 litres of hot water to the kettle (add flavourings if you like: beer, wine, broth, herbs, garlic, onion, etc).
-
Once the temperature is stable, reduce the opening of the lower air vents (e.g. to ~¼).
-
Add soaked wood chips to make the smoke last longer (refresh every 30-45 min ).
3) As a cold smoker
Cold-smoking is suitable for delicate foods and shorter smokings. Temperature range 20-30°C
-
Use a smaller amount of lit lump charcoal (about ¼-½ basket).
-
Add the smoke chips and ice water to the water bath to keep the temperature low.
-
Place the food on the top rack (on foil if necessary).
-
Smoke for 10 minutes to 2 hours.
Safety and installation
-
Always use the appliance on non-combustible surfaces (concrete, stone, etc.).
-
If possible, place in the shade so that the sun does not raise the temperature.
-
Keep at least ~60 cm away from flammable objects (lawn, shrubs, patio furniture).
Cleaning and switching off
-
Clean the brush residues.
-
Close all air vents and allow the appliance to cool completely.
-
Remove and wash the water tank.
-
The ashes were poured into a metal container. You can leave the usable charcoal until next time, but protect the appliance from excessive moisture.
